- 1 Cup Raw Whole Macadamia Nuts
- 1 Cup Melted Coconut Butter
- 5 Eggs
- 1/2 tsp Salt
- 1 Heaping tsp of Baking Soda
- 3 Tablespoons of Lemon Juice
Add a generous cup of macadamia nuts into a food processor and grind them until they are a peanut butter consistency. Next, pour the softened/melted coconut butter into the food processor and mix. Add eggs one at a time. At this point, the mixture should be fluffy and smooth. Then mix in 1/2 tsp salt (omit this if the nuts are a little salty) and 1 heaping tsp baking soda. Finally, mix in 3 tablespoons of lemon juice. Pour mixture into a well-greased (I used coconut oil) bread pan. Bake at 350 for 35 min.
I love to add grass-fed butter on top and it’s a very healthy and satisfying snack!
